Ethiopia is thought to be the birthplace of coffee with wild growing Coffee Arabica being found in the forests of the Kaffa region. Ethiopia coffees are among the world's most varied and distinctive, with not only Sidamo, but Yirgacheffe, and Harrar coffee growing regions
This type is grown in the Sidamo region south of the capital, Addis Ababa. It is the most southern and most productive province in the country. The region is well known for having ideal climate conditions for growing coffee. This is all due to high altitudes of between a 1600 - 1900 meters, ample rainfall, optimal temperature, and rich soil. These elevations qualify the beans as Strictly High Grown (SHG) / Strictly Hard Bean (SHB) – elevations where the best Ethiopian coffees grow more slowly and therefore have more time to absorb nutrients and develop more robust flavours based on the local climate and soil conditions
Washed Sidamos are typically high quality coffee with unique sweet lemon and floral flavours, and an ideal balance between acidity and body
This washed Ethiopia Sidamo is characterised by well-defined and strong positive aromatic notes, the most distinctive flavour notes found in all Sidamo coffees are lemon and citrus with bright crisp acidic. The high level of cocoa, goes hand in hand with a very strong flower and honey note followed by a pleasant touch of dried fruit (chestnut, almond, walnut and pistachio).
The spicy notes of tea, liquorice, tobacco, and rhubarb can be sensed alongside the sensations of fine herbs.
There is also a nice sensation of toasted, caramel and cereals as well as a slight balsamic note of mint, anise and alpine herbs.
